So I made my first Vietnamese flan the other day. Otherwise known as “banh flan”.
It’s similar to a creme brulee except it’s made upside down. This means the sugar layer is at the bottom of the cake pan where you caramelise it over the stove first, add the “egg” layer and then bake it in the oven or steam over the stove.
My mum usually steams hers over the stove but you tend to get alot of air bubbles in the flan. I attempted to cook my flan in the stove with no idea at what temperature and for how long. In terms of ingredients, all you really need are eggs, milk and sugar! Too easy!
After one failed first attempt, I managed to make my first “banh flan”.
Tasted pretty good.
